Spinach Party Balls

I'm calling these spinach PARTY balls for a few reasons.   


#1: I got the recipe from a lady who is a party unto herself:  Suzzanne Bonn- a lively wife and mother who loves to cook and will do so for just about anybody.  I'd tell you how many kids she has, but the truth is anyone walking through her door is treated, welcomed and fed like family.  (She's also responsible for the my ATOMIC  salad dressing inspiration).


#2: They are great for hosting a party.  Hot, easy, toothpick using, veggie lover friendly and incredibly addicting.  My "after" photos are lacking a bit of presentation because we were indeed "hosting" about 30 people in our home.  Needless to say I was a little distracted before I realized I never took plating photos!  They were half gone, but at least you get a taste (well, sort of).


#3: They are a PARTY IN YOUR MOUTH.  Lots of favors going on.  And they are packed with spinach!  OK, and some other items, but let's focus on the positive!  



Spinach Party Balls (compliments of Suzzanne Bonn)


2 melted sticks of butter
4 eggs
3/4 cups parmesan cheese

1 medium onion
4-5 cloves garlic

1 tsp thyme
salt and pepper to taste
2 pkgs frozen spinach, thawed and squeezed out
2 pkgs Stove Top Stuffing mixes






Thaw and rinse your spinach.  Squeeze any extra water out.


In a food processor combine melted butter, eggs and chopped onion. (I did this in two rounds)


Add in your cheese, spinach, garlic, thyme, salt and pepper.


Place green goodness into bowl.  (Repeat for the second batch if you have a small food processor).


Add packets of Stove Top.  You may feel like you're cheating, using packaged ingredients, but remember you have a party to host!  One must take necessary steps for success.


Mix with hands.  This part always takes me back to my childhood.  I was not a messy kid.  My mother has pictures of me crying when I had food on my face.  So this hand in food thing never lasts all that long.  haha



Roll into 1 inch balls on greased pan.  Bake at 350 for 15-20 minutes.  This recipe made about 50 balls.  You're going for slight crunch on the outside.


Delectable.


And nearly gone.

  2. They're NOT VEGETARIAN if you used Stove Top Chicken stuffing! That has chicken broth in it. :( Looks like a great idea but please find a veggie alternative to the Stove Top!

  3. May I suggest Whole Foods Croutons? Garlic butter flavor are great. One day this week I'm going to try the recipe with two bags of broken-up croutons, I'll let you know how it goes.
