Chocolate Zucchini Bread (and some college memories)


Chocolate.  Zucchini.  Yes.  Just yes!

I keep coming across these old favorites of mine.  This chocolate zucchini bread was what my mom would send me in college.  These care packages started freshman year.  I didn't want anything else, BUT THIS BREAD!  It's like the best bread, in dense, chocolaty, moist cake form.


My confession was that I really had a hard time sharing it.  My roommates would give me a hard time about it.  I admit I was a little selfish.  Girls: will you forgive me?  haha.  Come visit me and I'll make you your own!

Thought I would dedicate this entry to all my college funny food/restaurant/kitchen moments.

OK... enough about my college days.  Those pics were of old friends and table memories.  So many meals of frozen veggies and toast, followed by midnight boxed cake.  Love you girls.

Chocolate Zucchini Bread

3 squares cooking chocolate or cocoa equivalent 
3 cups flour
1 1/2 tsp baking powder
1 1/2 tsp baking soda
1 tsp salt
4 eggs
3 cups sugar
1 1/2 cup oil
3 cups grated zucchini

Heat oven to 350 degrees.


Grate your zucchini.  Pack in the three cups.

Mix the eggs.


Add sugar and oil.


I used cocoa to create the cooking chocolate equivalent.


Add chocolate and beat it all together.


Add salt, baking powder and baking soda.


(Double batch made me switch bowls)... now for the veggies!!!  Add in the zuc!!!


You may want to lick the spatula.


Something exciting about mixing green with chocolate!

Bake for 1 hour.

Afterwards, we devoured it with family!  Ron and Nancy Marks, it was great seeing you guys for dessert!

  1. yes! now i will have to make it. do you ever make friendship bread anymore? a definite college mem or hoarding and overeating every single time!

    (i am so glad we moved on from no pudge fudge!)
