Chicken Fried Rice

I love recycled leftovers. Sometimes it takes a little creativity, but this is as easy as it gets folks! Chicken fried rice: no rules, tasty, fast and saves well.


Feel free to add what sounds good to you. Pees, edamame, bell pepper, beans- this recipe is just to get you started.


Chicken Fried Rice (for 2-3, plus some for lunch)


2-3 cups left over cooked brown rice

1 1/2 cups shedded or chopped chicken, cooked

1/2 onion, finely chopped

2 cloves garlic, crushed and minced

1 cup frozen corn

1 cup shredded carrot

3 eggs

2 tbls soy sauce

Salt and Pepper

Cooking spray



In a large skillet or wok heated to medium heat, spray your cooking spray and pour your eggs (whisked together) in.


Add your salt and pepper. Cook for a few minutes, till the eggs are almost cooked.


Add all other ingredients except for rice and soy sauce. Turn up heat and cook for a few minutes till heated through. There should be quite the sizzle going on!


Stir in your rice and heat through. Add soy sauce. Taste, add more salt and pepper if needed. Table your soy sauce, as you may want more once plated.


How good does that look? I love when something is so yummy and so easy! We ate this for leftovers for a few days after and it was just as good!
