Edamame and Pea Soup with Herbed Lemon Cream


A few things... I love soups with few ingredients.  I also love Pinch My Salt.  I've been on a veggie kick since... well pretty much since I discovered farmer's markets.

Green is my favorite color.  And most green things are good for you.  So it works out well for my presentation.  Green represents life, spring, growth and fresh.  My girlfriend and I painted our room green in college because we read it invited tranquility and calm.  In our crazy college life, this was a good call.


I didn't blend this soup into a complete puree but left it a little chunky.  It made for great texture and you could still get a bite full of edamame.


Now don't get too excited about this ingredient photo.   I must have been in a healthy mood or something, because I left out the creme fraiche, the stock and the sugar.  Still very healthy, but I know the photo is a little deceiving.  Wishful thinking... but one needs a little fat to tie all the flavors together . Otherwise we might turn into Shrek, Jim Carey (The Mask) or the Hulk with your 5 (count 'em 5!) green ingredients.

Edamame and Pea Soup with Herbed Lemon Cream

Soup:

1 onion, chopped
1 shallot, diced
1 celery stalk, chopped
2 tbls olive oil
3 cups shelled edamame, frozen(do not get the ones in the pods, you'll grow old in the kitchen)
1 cup green peas, frozen not canned
4 cups chicken or veggie stock
1 tsp sugar
Salt and Pepper to taste

Herbed Lemon Cream

1/2 cup creme fraiche
1 tbls chopped chives (Pinch My Salt uses dill)
1 tbls chopped mint
zest and juice from 1/2 a lemon


Chop your oni, shal and cel.  I'm big on abbrevs.


Put them in a pot with olive oil and soften over medium heat for about 10 min.


Stir in edamame and peas.  Then add your stock.

Turn up heat and bring to a boil.  Then simmer your green goodness for 20 minutes covered.

Time for the fancy "creme."  This creme makes the soup over-the-top yummy.


Combine creme fraiche with herbs and lemon parts.



Stir and chill.


I think the soup is ready for the blender.


I couldn't help but think of the scene from Toy Story with the little green alien toys and "The Claaaaaawwwww."  Accept it's beans and peas and "The Blaaaaade."  Maybe, a little evil, but I don't personally believe that legumes have souls, so we're OK.


I left it chunky. Add your finishing salt and pepper to taste.


Serve up pipping hot and top with herbed lemon cream and garnish with chives.

This soup freezes great. Great protein hit without a ton of saturdated fat. Go GREEN or go hungry!
