Morning People Muffins


Chris and I are morning people. If you call us close friends, you most definitely know this. And now you all know! We're all besties now!

I love a tasty muffin. I love a tasty, healthy muffin even more! I found this recipe on Feed Me Seymour. She calls them sunburst muffins, and they really are a bit of sunshine. Morning sunshine! The start your day off right kind. I loved all the breakfast food INSIDE these muffins. Fruit, oats, yogurt, egg whites! Sign me up! I love breakfast, don't you?




The only change I made was 1/2 cup sugar, instead of the original 1/3 cup. I'm glad I did that. They were perfectly flavored without being overly sweet. I also only had one orange on hand, so I saved all my zest for the topping.


Morning People Muffins

1 ½ cups old-fashioned oat
1 cup all-purpose flour
½ cup brown sugar
1 tsp. baking powder
½ tsp. baking soda
½ tsp. ground cinnamon
8 ounces Greek yogurt
2 mashed bananas
2 egg whites
2 Tbsp. vegetable oil
Zest of one orange

Heat your oven to 400 degrees.


Combine dry ingredients in a bowl.
In a mixing bowl, combine yogurt, banana, oil and egg whites.

Combine them all together.


Spray your pans. Scoop the batter in. Aren't my cute little heart muffin tins darling? How do you show your love? With muffins? I do.


Can't wait for them to bake! Into the oven for 11-12 minutes.


Look at that zest! Need a valentines gift for a food lover? Do they own a microplane? You might just make their year.

Top with zest immediately. The oil in the zest will infuse into the muffin because of the heat.

You might want to make these for someone you love. I did. Our sweet friends from Boston came for breakfast this morning! 7am couples date! I told you we were morning people!

  1. I've never been a morning person, but I would welcome these sunburst muffins anytime.
    And, unlike some 'healthy' muffin recipes, this one calls for only 2 Tablespoons of oil. Another reason to love them.
