Chewy Low Fat Banana Nut Oatmeal Cookies


Hello muffin.  Meet cookie.  And this is banana.  Instant friendship.  And they're healthy friends too!

I got this recipe from Gina's skinny recipes.  She has a lot of great ideas on how to make some of the classics (and the not so classics) better for you.  And for you Weight-Watcher fans out there, she gives you the specs on the points, calories etc.  See here for those.

But when we're eating cookies, that's not really the point.  No one is going to eat a bad cookie.  But a good cookie, or a great cookie: yes please.  And a great cookie that is good for you?  DOUBLE YES.


So here you go:

CHEWY LOW FAT BANANA NUT OATMEAL COOKIES

(Dedicated to Whit and Dad... the banana lovers)





1 cup all purpose flour
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1/2 tsp ground cinnamon
2 tbsp unsalted butter, room temperature
1/2 cup sugar
1/2 cup unpacked brown sugar
1 large egg
1 medium mashed ripe banana (Gina used 1/4 cup mashed, but a little extra banana won't hurt anyone)
1/2 tsp vanilla extract
2 cups rolled oats
3/4 cup chopped walnuts

The usual scene.

Dry ingredients into a bowl.


Mix up sugars and butter (room temp) in separate bowl.


Add solo egg to its sugary bed.


Mix well and add the nanners.


Then add your dry ingredients.


Then your rolled oats.  Is this starting to look like breakfast or what?  Cookies for breakfast?!?! Exactly.

"self control" put. the. spoon. down.

Then add the nuts.  Even if you're not a nut person, they really added great texture.


Heap into lovely lady lumps, about a large spoonful.  Parchment paper makes for easy clean up, but not necessary.


350 degrees for about 9 min, or until the edges are just browning.


Let cool for about 3-4 min.


Stack cookies in elegant dish to elevate their worthiness of being eaten.

On first bite I thought "wow... surprising!"

On second bite I thought "it's like a breakfast cookie."


Unfortunately they were all consumed before morning.  Our friends are good cookie eaters.  :-)
